Description: Based in Tasmania, Jason Ellard has been forging metal and creating handmade chef knives since he was 15 years old. Jason creates some of the finest damascus blades and one-of-a-kind chef’s knives you will find anywhere -- and he does this using only a hand-powered fly press, which is quite an impressive feat on its own. When he first began, Jason raised money to purchase tools for his shop by forging and selling train-track anvils. He not only invested in metalworking tools, but he began making them as well. Learning from other talented makers in his area and through endless trial and error, Jason has developed a reputation as an innovative and skilled bladesmith, pushing himself and the boundaries of his chosen medium to create exquisite, heirloom tools for the kitchen. Each piece offers that combination of form and uncompromising function.
Like other chef's knives, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all.
Jason hand forged this knife from Hitachi Aogami 2 (Blue #2) carbon steel, ensuring a keen, long-lasting edge. Because this knife is made from carbon steel, we recommend camelia oil to protect it from rust and oxidation. It was forged in a technique known as brut de forge. The top section of the blade features a forge finish – with hammer blows that speak to this knife’s origins. The grind features a hand rubbed satin finish. The blade moves seamlessly into an integral bolster. This technique has superior structural integrity and requires a particularly talented smith.
The handle is natural Micarta with a black G-10 spacer. The handle is sculpted to swell at your palm, move into a slimmer waist, and swell again at the beak. The handle will fit a range of grips. This knife is sure to be a kitchen favorite!
