This American-made chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is a perfect choice when slicing vegetables and meats. The gentle curve of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8-1/3 inches, this is among the most popular sizes for a primary chef's knife. It is large enough to get most any task done, yet short enough to do it with ease.
The blade is high performing, low care 154CM stainless steel and has an heirloom quality hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. It is convex ground and provides a durable chip-resistant edge.
The Honduran rosewood handle is inspired by Japanese handles. The rounded shape provides a secure, comfortable grip for hours of use. Gaboon ebony provides a nice contrast to the rosewood. Nickel silver spacers assist the handle to adjust to temperature and humidity changes.
