Description: Martin Huber hails from Austria and is considered one of the greatest chef knife makers from that region. His father, mother, and grandfather all had blacksmithing and metalworking experience which lead to Martin learning the trade at a young age. Martin took four years of formal blacksmith instruction in his home town of Steyr, Austria before opening up his own shop in 2016. Martin's kitchen knives have well thought out designs and efficient cutting geometry.
The 7 inch damascus blade is hand forged from 60 layer damascus, combining O2 and 15n20 carbon steels to ensure excellent edge holding and chip resistance. The top of the knife is forge textured which helps with food release. The spine and choil are rounded for comfort. The blade has a distal taper for excellent balance in hand. We recommend using camellia to protect the blade and natural wood handle.
The ambidextrous Japanese-inspired half octagonal handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. The handle combines stabilized poplar burl with a central spacer of ringed gidgee and a bog oak bolster. The combination of exotic woods creates a durable, yet beautiful handle. This is a knife you won't want to put down.
An edge guard is included to protect the blade when it is not in use.
