Description: This exceptional vegetable cleaver is the work of Kentucky bladesmith Joshua Fisher. Joshua is a full time knifemaker and a Forged in Fire champion (season 8, episode 23). He started making knives when he was 22 years old. He liked the idea of being able to take raw materials and make a functional tool that can be used every day. Joshua was honored to work with Wounded Warrior Project teaching veterans how to make knives, tomahawks, and other tools -- providing a unique experience and outlet for the veterans.
This vegetable cleaver is a beautiful multi-tasking blade — the long edge is perfect for chopping and slicing vegetables as well as portioning meats and other proteins. While it may look like a meat cleaver, it isn't (you'll want a heavier cleaver for breaking bones). Instead, vegetable cleavers are used like a chef's knife. It is adept at processing large quantities of vegetables for stir fry and thinly slicing meats. Every part of this knife can be put to use. Use the flat to smash a garlic clove. Use the back to tenderize meat. Use the razor-sharp edge for everything from skinning fish to shaving vegetables. Once you use it, you'll find yourself reaching for this precision knife more and more often.
The blade is Nitro-V stainless steel with a satin finish. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless. A shinogi style ridge along the bevel helps facilitate good food release from the sides of the blade.
Black Richlite handle scales are set on a full tang using torx screws. This allows the scales to be removed if cleaning or maintenance is ever needed. The scales are contoured to provide a comfortable grip. Like other knives, this knife should not be put in the dishwasher.
