Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high-performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade effortlessly slices and chops vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. This knife, with its deep belly combines a German-influenced shape with a nimble Japanese edge geometry.
The heat treatment followed the formulas developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long-lasting edges found anywhere. The blade is hand forged from 52100 carbon steel with a low temp triple quench and triple temper. Many knife users as well as knifemakers feel that this combination results in the best performance currently found in the knife industry.
The handle is presentation grade Australian ringed gidgee set to the distal tapered full tang with three Corby hidden bolt rivets. This resinous wood holds up beautifully to the heavy demands of either a home or professional kitchen. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. 416 stainless steel bolsters are carved to comfortable accommodate a pinch grip. Like other knives, this knife should not be put in the dishwasher.
Exceptional work throughout! This is sure to become your go to knife in the kitchen.
