Description: Acre Forge is a community of passionate, expert bladesmiths based in Portland, Oregon. From one-of-a-kind Signature knives to production knives designed collaboratively by their makers, they are committed to creating gorgeous, high-quality kitchen knives that chefs and home cooks alike can treasure for life. This custom chef’s knife was made by Greyson Walker of Acre Forge.
The chef’s knife is a multipurpose knife used for just about every cutting job in the kitchen. Whether chopping, slicing, dicing, or mincing, this will be your goto knife. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. This chef’s knife is sure to be a kitchen favorite.
The blade is flat ground, distal tapered AEB-L stainless steel. AEB-L is ultra-high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort.
Handle scales are Arizona desert ironwood set on a full tang using brass pins. They are perfectly fit to natural Richlite bolsters. Natural Micarta liners complement the scales and bolsters nicely. The handle fills your hand and provides a comfortable grip. Like other knives, this chef’s knife should not be put in a dishwasher.
Excellent work throughout!
