Description: Acre Forge is a community of passionate, expert bladesmiths based in Portland, Oregon. From one-of-a-kind Signature knives to production knives designed collaboratively by their makers, they are committed to creating gorgeous, high-quality kitchen knives that chefs and home cooks alike can treasure for life. This custom knife was made by Jamison Chopp of Acre Forge. Jamison has been a full time bladesmith since 2014 and was formerly a Muteki bladesmith for Carter Cutlery. Jamison focuses primarily on Japanese knifemaking techniques and profiles that are not only aesthetically pleasing but also very functional. He works with a wide array of steels from stainless to handmade san mai and damascus (suminagashi) cladding. Each knife is 100% unique and will never be replicated exactly the same.
This upswept boning knife is perfect for preparing fish and poultry. The ambidextrous blade is forged from Jason's own san mai, combining a 52100 carbon steel core with A203 nickel steel cladding. Many knife users and knifemakers feel that 52100 is among the highest performing (if not the best!) steels currently used to make knives today. The spine and choil are nicely rounded for comfort. We recommend using camellia oil to protect the blade and wood handle.
Handle scales are curly koa set on black G-10 liners. Koa (Acacia koa) a beautiful exotic wood that only grows on the Hawaiian islands. With its tight curl, it is one of the most desirable woods in the world. The contoured handle fills your hand and provides a comfortable grip. Like other knives, this knife should not be put in the dishwasher.
