This small cleaver is a perfect utility knife for chopping small herbs or portioning cheese – though it will also make a great chef’s knife for the cook that prefers a smaller, easier-to-control knife. The 3-3/4 inch blade keeps the knife light and nimble while the still retaining height over a cutting board. This knife could be the perfect companion for your next charcuterie board!
The blade was hand forged in a technique known as san mai. An SG-2 powdered metallurgical stainless steel core is surrounded by alternating layers of nickel and stainless steel. SG2 is a super-steel created by Takefu in Japan. It ensures exceptional edge holding with a keen, superior edge. SG2 is among the highest performing stainless steels in the knife industry. A forge finish along the top of the blade helps facilitate good food release.
The ambidextrous handle is inspired by the Japanese half-octagonal handle design. It combines stabilized Australian beefwood (Grevillea striata) with a buffalo horn ferrule. Beefwood is exceptionally dense, ensuring a strong, durable, and beautiful handle. A thin nickel spacer will help the natural materials adjust to humidity and temperature changes in the kitchen. Like other knives, this knife should not be put in the dishwasher.
