Description: Seattle knifemaker Noah Larson makes knives by hand out of his shop right on the Duwamish River. He's been making knives for over four years and specializes in culinary knives. This utility knife is a perfect choice for detail tasks. It is a good middle ground between a slicing knife and a paring knife and is a good choice when slicing tomatoes or chopping garlic. The slender blade combines control and precision.
The blade is flat ground by hand from 26C3 carbon steel. Hardened to 63-64 Hrc, this Uddeholm carbon steel is a high carbon, low alloy steel well suited for fine cutting knives. Sometimes called 'Spicy White', this very clean steel is relatively similar to Hitachi White. The resulting blade has an extremely keen, long-lasting edge, yet it is also relatively easy to sharpen on stones. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. An oxide finish makes it easier to take care of this carbon steel blade.
The Japanese-inspired octagonal handle offers a comfortable, ambidextrous grip. The handle is myrtle wood from a small mill in Tillamook, Oregon. A Hassui ceramic wood finish seals the handle protecting it from water. The wood selected is a pleasant light tone with darker figure moving throughout the wood. Like other knives, this knife should not be put in the dishwasher. This knife is sure to become a favorite in your kitchen!
