Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials. This meat cleaver will make quick work of heavy duty tasks in the kitchen.
Meat cleavers are ideal for chopping down large cuts of meat, light bones and hearty vegetables. Having a meat cleaver for heavier tasks ensures your primary knife used in the kitchen always stays in tip top shape.
The blade is hand forged 52100 carbon steel. Many knifemakers as well as knife users feel that 52100 is among the best (if not the best) steel used in the modern knife industry. It provides an exceptionally keen, long lasting edge matched with excellent durability. The top of the blade features a forge finish with the bottom half of the blade featuring a hand rubbed satin finish. At 3-1/4 inches tall, this cleaver has lots of clearance over the cutting board to accommodate larger hands and ensuring the knife will last through many sharpenings.
The handle is Cuban mahogany, finished with twenty coats of TruOil. Cuban mahogany (swietenia mahagoni) is a truly special wood with a rich history. It is substantially denser and stronger than its relative Honduran mahogany. By the 1950's it was harvested to commercial extinction and is rarely seen on the market today. The piece used for this handle was salvaged from a tree located on Oahu. The subtly figured figure complements the antiqued blade well. The handle is sealed with an antiqued bronze bolster. The contoured handle fills your hand and provides a comfortable grip.
