Description: Prior to starting Sea Rose Knifeworks, Sasha Rosenfeld was a professional cook in Seattle for 15 years. When he made the move from chef de cuisine to stay-at-home dad and part time prep cook, he began taking blacksmithing classing and began forging his first kitchen knives in his backyard while his daughter was napping. In the fall of 2018, Rosenfeld decided to step away from professional kitchens for good and opened Sea Rose Knifeworks.
This knife will be a perfect 'go to' knife in the kitchen. The 10-1/2 inch blade has plenty of reach to get any task done, yet at just 9 oz, this knife is nimble enough that it is still easy to control. A gentle arc to the blade's edge makes this a perfect knife for both a rocking chop and a forward slice. Whether chopping onions, slicing tomatoes, mincing parsley, or portioning and slicing meats, this elegant chef's knife is sure to become your 'go-to' knife in the kitchen.
The 10-1/2 inch damascus blade was hand forged from 1080 and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The damascus combined alternating high layer and low layer count damascus for a particularly captivating effect. The bold pattern grabs attention from a distance while the fine patterns demand closer inspection. The blade was brought to a high polish for an elegant, dramatic appearance. The spine and choil are rounded for comfort. A distal taper in the blade provides perfect balance despite the long blade. Because the blade is forged from carbon steels, we recommend using camellia oil to prevent rust.
The handle is stabilized amboyna burl. Amboyna burl is highly prized for its elegant red tones and swirling figure. It is among the most desirable woods used in knifemaking. The spacer and bolster are AEB-L stainless steel. Like other knives, this set should not go in the dishwasher.
