Description: A bunka is a Japanese general purpose chef's knife. Like the santoku, a bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The aogami 1 carbon steel core (hagane) is surrounded by damascus forged from layers of mild steel. Aogami 1 is a highly sought after steel. The addition of tungsten and chromium gives aogami slight oxidization and wear resistance. At 62-63 Hrc, aogami 1 is famous for its keen, long-lasting edge. Because both the core and surrounding layers are reactive, we recommend using camellia oil to avoid rust. Simply wash and dry the knife, then spray with just a little camellia oil. After lightly wiping it off, the micro-thin layer of oil helps protect the carbon steel. The blade is distal tapered (beginning with a thick spine where the blade comes out of the handle and becoming progressively thinner as it approaches the tip). The spine and choil are rounded and polished to remove any potential hot spots during use. A shinogi grind assists food release.
The octagonal "Wa" style handle is ambidextrous. Ebony wood is combined with a blond buffalo horn ferrule. Like other kitchen knives, this knife should not be put in a dishwasher.

The shinogi-style grind allows for effortless chopping and slicing with exceptional food release. This is as good as a culinary knife gets!
