This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for chopping vegetables, slicing meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8-3/4 inches, it is a perfect size for either the professional or home chef. This knife is sure to become your kitchen favorite.
The blade is hand forged stainless damascus san mai. A central bar of premium Takefu SG2 powdered metallurgical stainless steel is surrounded by alternating layers of stainless steel and nickel. At Hrc 63-64, this chef's knife has exceptional edge holding. The blade has tremendous, thin geometry and will effortlessly slice and chop.
The Japanese-inspired oval handle combines Arizona desert ironwood with an African blackwood bolster. Desert ironwood (Olneya tesota) is a rare wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is extremely dense and durable. In fact, it is so dense, that if a piece is dropped in water it will sink! The handle nicely accommodates a comfortable pinch grip. This is a knife you won't want to put down. Like other knives, this knife should not be put in the dishwasher.
