Description: Forge to Table was started by chef Noah Rosen. Their knives are hand forged by a 3rd generation blacksmith in China. Forge to Table knives bring an affordable, yet quality option to the world of culinary knives.
Honesuki are Japanese boning knives. Great for boning chicken and red meats but also amazing as a general purpose utility knife! The shape provides finger clearance when working over a cutting board. A gentle rock to the blade makes it an optimal chopping knife. The thin, aggressive point makes it even capable of detail tasks where a paring knife would otherwise be used. This honesuki features a 50/50 double bevel grind and is ambidextrous.
The blade is hand forged from Japanese AUS10A, a highly refined, high-carbon, vanadium stainless steel that takes a razor-sharp edge and holds it longer. This steel is often compared to VG-10 due to its similar level of edge holding and ease of sharpening. The blacksmith's kurouchi finish helps food release from the side of the blade.
The Japanese style octagonal handle is made from African padauk (Pterocarpus soyauxii) with a buffalo horn ferrule. It is comfortable for both right and left handed users. Padauk wood will hold up extremely well in the harsh environment of either a professional or home kitchen. Like other kitchen knives, this knife should not be put in a dishwasher.
