Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
This chef’s knife was designed for fine, detailed work and light chopping. The upward-swooping handle provides finger clearance when rock chopping, making this an ideal all-purpose knife for someone who prefers a smaller, more easily controlled knife. The spine and choil are nicely rounded for comfort. With a saya to protect the blade, this also becomes a great knife to take on vacations (we all know the condition of the knives in a rental property) or camping.
Gaboon ebony handle scales are set on the full tang for strength and durability.
The blade is hand ground AEB-L stainless, which was developed for razor blades and surgical knives. Its fine grain structure makes it ideal for thin culinary knives. These blades are heat treated to Rockwell 63 for exceptional edge holding. A hand rubbed satin finish lends an heirloom quality to the knife.
