Description: The classic cleaver is the most widely used knife across China. Unlike European cleavers, a Chinese cleaver of this style is crafted for balance and performance akin to a chef's knife rather than a heavy butcher’s cleaver. Prepare to be astounded while this thin, high performance blade finely minces and dices while remaining comfortable to use for an entire kitchen shift. The subtle curvature of the blade allows for smooth transitions from dicing to rocking-chopping. For durability, this blade's tang runs through the entire length of the handle. The even weight distribution puts the power where you need it for any chopping task -- across the entire edge.
This Chinese cleaver by Hatsukoro-Sentan is hand forged san mai. The Japanese Shirogami #2 carbon steel core is clad in layers of softer stainless care -- imparting increased strength and durability while easing care and maintenance. Shirogami #2 carbon steel ensures a keen edge that is also easy to sharpen. The blade features a kurouchi finish (forge finish) and moves into a satin finished convex ground cutting edge.
The traditional barrel-style maple handle has a stainless steel ferrule. The tang goes all the way to the end of the handle.
Like other high end knives, this cleaver should be washed and dried by hand. While the stainless cladding makes care and maintenance easier, the area near the cutting edge is carbon steel and will rust if not cared for properly. This Chinese cleaver should not be used to chop through frozen food or bones.
