Description: C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He apprenticed under Mastersmith David Lisch. Luis' past career as a chef provides him with an understanding of culinary knives that is rarely found in other bladesmiths.
The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. The small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The damascus blade is hand forged from 1080 and 15N20 carbon steels. The bold patterned damascus is immediately captivating and draws attention for closer examination. By forging closely to shape, Pina ensures optimal grain structure for a keen, long lasting edge. The spine is rounded for comfort. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The Japanese-inspired oval handle is hand contoured from African Blackwood. Blackwood is a dense, nearly jet black wood that holds up beautifully to the demands of either a homer or commercial kitchen. Black G-10 and silicon bronze spacers will help the natural wood adjust to humidity and temperature changes. Like other knives, this knife should not be put in the dishwasher.
