This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The blade was hand forged in a technique known as san mai. A dramatic stainless nickel damascus is forged to the sides of a high performance SG2 stainless steel core. The polished surface is extremely dramatic. SG2 is among the highest performing stainless steels used to make knives. It holds an exceptionally long edge and can be sharpened to a hair-splitting razor sharp edge. The spine and choil are rounded for comfort. Bill's touchmark is hand engraved on the left side of the blade. His M.S. mark is on the right side.
The handle is dyed and stabilized maple burl. It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. By stabilizing the wood, Bill ensures that the knife will hold up well to the heavy demands of either a home or commercial kitchen. The bolster is 416 stainless steel, pinned and soldered to the blade for strength and durability. The knife is perfectly balanced and extremely comfortable to hold. This is sure to become your go-to knife in the kitchen. Like other knives, this knife should not be put in the dishwasher.
