Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives. This chef's knife will be a kitchen favorite. The low profile shape features a slightly thicker spine and results in perfect food release. It will be a high performance workhorse.
This is your primary chef's knife. Whether chopping, slicing, dicing, or mincing, this 8" chef's knife will do it all. At 8 inches, it has a long enough reach for virtually any task, yet it is still easy to control. This knife is a perfect addition to your knife roll whether you're a professional chef or home cook.
The san mai blade is hand forged by fellow Swedish bladesmith Magnus Jönsson. The steel combines 80CrV2 carbon steel with a large layer of nickel set in between. 80CrV2 carbon steel has extreme toughness paired with excellent edge holding. The blade was etched to a jet black to provide some limited rust resistance. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort.
Dyed and stabilized birch burl is fluted and textured at the back to improve grip -- even if the handle is wet. It is heirloom fit to a hand textured copper ferrule. The stabilized birch handle will hold up well to the harsh demands of a professional kitchen. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade and natural wood handle.
The custom traditional Swedish birchwood box was made by Erling Orvo. Erling was an older gentleman local to Gregor. Unfortunately, he passed away only a few months after making this gorgeous custom box.
