Not only that, but the long, narrow blade makes it easy to cut slices in a single pass, ensuring more of the juices -- and the flavor -- stay inside the meat. Because this knife is long, slices will look great since there's no need to saw back and forth. That way you can be sure every slice is perfect.
The 10-1/4 inch san mai damascus blade was forged by Adam Deville. The complex steel features Adam's nickel rain damascus laminated around an 80CrV2 carbon steel core to ensure excellent edge holding. The blade was hardened to 60 Hrc. The blade was hand ground by Forselius and features an S-grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow ground primary bevel, and finally moves into a flat grind as it approaches the spine. This technique lightens the overall weight without sacrificing strength and provides excellent food release. This combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge. A finger notch allows you to choke up on the blade for more detailed cutting tasks. Greger's touchmark is on the right side of the blade. Because this knife is made from carbon steels, we recommend using camellia oil to protect the blade and wood handle.
The ambidextrous Japanese-inspired handle is a style called a half-octagonal. The faceted top is matched with a rounded base for comfort. The handle is stabilized and dyed white oak burl. Mature white oaks can reach heights of 60-100 feet and widths of 40-90 feet. The front of the handle is sealed with a textured Micarta bolster carved to accommodate a comfortable pinch grip. Like other knives, this knife should not be put in the dishwasher.
To protect the knife during transportation, a hand stitched leather sheath made by Greger is included.
