Description: Pieter van der Bank of PVB Knives is a bladesmith from the small town of Heidelberg located in the Western Cape of South Africa. Pieter has been hand crafting unique kitchen knives since 2016 and focuses on both European and Japanese-inspired chef's knives. His fit and finish is excellent and his understanding of chef knife geometry is equally well thought through.
The gyuto is modeled after the French pattern chef's knife. It is a general purpose chef's knife and is perfect for slicing meats and proteins as well as chopping, mincing, and dicing fruits and vegetables. Whether slicing onions, chopping bell peppers, or portioning meats, this will be your go-to knife.
The 8-1/2 inch blade is hand forged from Pieter's own san mai, combining a 1095 carbon steel core with wrought iron cladding recovered from an antique ox wagon wheel. A bright nickel layer set between creates a stunning transition and helps prevent carbon migration. The spine and choil are nicely rounded for comfort. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade and natural wood handle.
The Japanese-inspired octagonal handle is stabilized box elder burl. The front of the handle is sealed with a hornbeam wood bolster. G-10 and birdseye maple spacers will help the handle adjust to humidity and temperature changes. Like other knives, this knife should not be put in the dishwasher.
A leather custom blade protector is included to protect the knife during transportation.
