Description: South African knifemaker Willie van der Merwe has had a passion for knives for all his life, but didn’t start making knives until just after his retirement in 2016. He attended courses with some of the best knifemakers in South Africa and was soon making truly exceptional knives. His most inspired when making larger knives and daggers. Lately he has been trying his hand at some high performance kitchen knives.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is hand ground Bohler N690 stainless steel with a hand rubbed satin finish. It takes an incredibly sharp edge and holds onto it. Increased toughness gives it better resistance to edge chipping. The spine and choil are softened to prevent hot spots. Willie's touchmark and 24k gold inlayed ant are on the left side of the blade.
The faceted handle is dyed and stabilized maple burl, secured to the tang using a hand domed pin. The slender handle is extremely light weight and comfortable to hold. The front of the handle is sealed with a stainless steel ferrule. Like other knives, this knife should not be put in the dishwasher.
