Description: C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. Luis' past career as a chef provides him with an understanding of culinary knives that is rarely found in bladesmiths.
Like other chef's knives, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver — even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this nimble knife will do it all.
Pina began forging this integral chef's knife beginning with 1080 and 15N20 carbon steels. The damascus pattern damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from the blade into the bolster. This technique has superior structural integrity and requires a particularly talented smith. Pina, who specializes in this technique, is clearly up to the task.
The handle is stabilized maple burl, hand contoured to provide a secure, comfortable grip. It will hold up well to the harsh demands of the professional kitchen. Alternating black G-10 and phosphor bronze spacers finish the handle. Like other knives, this knife should not be put in the dishwasher.
