Description: Before starting Sea Rose Knifeworks, Sasha Rosenfeld worked as a professional cook in Seattle for 15 years. When he made the move from chef de cuisine to stay-at-home dad and part-time prep cook, he began taking blacksmithing classes and began forging his first kitchen knives in his backyard while his daughter was napping. In the fall of 2018, Rosenfeld decided to step away from professional kitchens for good and opened Sea Rose Knifeworks.
You can think of a paring knife as a smaller version of a chef's knife because a paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is high-performing AEB-L stainless steel. AEB-L is ultra-high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors that require corrosion resistance, high hardness, and very sharp edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. A Fujiwara-inspired finger notch encourages a pinch grip for greater control. The blade has thin geometry and will effortlessly slice and chop.
The handle is inspired by the Japanese ambidextrous octagonal handle and provides a comfortable grip. The handle is stabilized walnut burl, which will hold up well to the demands of a professional kitchen. The wood has a dramatic swirling figure. The front of the handle features a buffalo horn bolster. An AEB-L stainless steel spacer adds a nice contrast point between these two juxtaposed materials. Like other knives, this knife should not be put in the dishwasher.
