Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
The nakiri is a multipurpose chef's knife ideal for chopping fruits, vegetables, and boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
Miller's attention to detail shines through this elegant kitchen knife. The blade was hand forged to shape from Dale's own feather pattern damascus, incorporating 1080 and 15N20 carbon steels. The pattern moves from the cutting edge to the spine instead of the more typically seen heel to tip. The high contrast pattern immediately grabs attention and ensures a keen, long lasting edge. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
The bolster and blade are integral, showing Miller's tremendous skill at the forge. This technique results in a stronger construction, but takes a particularly skilled smith to pull off in a custom setting.
The Japanese-inspired octagonal handle is stabilized black palm wood (Borassus flabellifer). Black palm, despite its name, is not actually a wood but a type of grass. It's known for its distinctive appearance, featuring dark black fibers embedded in a lighter-colored matrix. This unique look makes it popular for decorative items. While it can be challenging to work with due to its fibrous nature and potential for tear-out, its high durability and unique aesthetic appeal make it a favored choice of woodworkers. A light toned holly wood spacer provides a perfect contrast to the dark toned handle. Like other knives, this knife should not be put in the dishwasher.
A custom yellow poplar wood saya made by Dale is included to protect the knife during storage and transportation. The fit on the saya is excellent. Very few saya are made this well.
