This chef's knife is likely to become the primary knife used in your kitchen. The blade provides finger clearance while being extremely dexterous. The blade has a perfect shape for an efficient rocking chop. Whether chopping onions, mincing garlic, or slicing meat, this knife will be a perfect choice. This chef's knife is sure to become a kitchen favorite.
Andrew hand forged the 52100 carbon steel blade. Many knife makers and knife users include 52100 carbon steel among their favorite steels. 52100 takes on a superior cutting edge that just won't quit. The spine and choil are nicely rounded for comfort. A forged finish along the spine helps with food release. Andrew's touchmark in Kanji along his M.S. mark is on the left side of the blade. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade from rust.
The Japanese-inspired octagonal handle is green dyed and stabilized curly maple. The ambidextrous handle is lightweight and provides a comfortable grip. The front of the handle is sealed with a black Micarta ferrule. Like other knives, this knife should not be put in the dishwasher.
This is sure to become a go-to knife in the kitchen!
