Description: What began at age 13 as a young pursuit of craftsmanship and self-reliance — using a campfire and a hair dryer to forge steel in the Georgia heat — has evolved into a passion-driven business for knifemaker Zach Rhymer. His first knife, forged from rebar on a simple cast iron anvil, marked the start of a journey that would grow alongside his skill and equipment. After deploying to Afghanistan in 2019, Zach returned home and reinvested his hard-earned savings into better tools and materials, elevating his craft to a new level. Today, his mission is clear: to create the highest quality knives he can physically produce — functional, enduring, and built to last for generations.
Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The blade is convex ground 26C3 carbon steel. This Uddeholm carbon steel is a high carbon, low alloy steel well suited for fine cutting knives. Sometimes called 'Spicy White', this very clean steel is relatively similar to Hitachi White. The resulting blade has an extremely keen, long-lasting edge, yet it is also relatively easy to sharpen on stones.
The style of grind Zach is using has the thickest part at the center of the blade and is convexed at both the spine and edge. This provides lots of food release without sacrificing strength. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. Rhymer's touchmark is on right side of the blade.
The handle is stabilized box elder burl, faceted by hand to provide a comfortable grip. Box elder burl holds up beautifully to the demands of either a homer or commercial kitchen. A dark toned African blackwood bolster adds a nice contrast to the light toned wood. A polished stainless steel spacer adds a nice transition between these two juxtaposed materials. Like other knives, this knife should not be put in the dishwasher.
A custom Rhymer zipper case is included to store the knife safely.
