Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
Like other chef's knives, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver — even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
Like his hunting knives, this chef's knife was tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. The blade is hand forged 52100 carbon steel with a low temp triple quench and triple temper. Many knife users as well as knifemakers feel that this combination results in the best performance currently found in the knife industry. This technique, combined with Bill's choice of steel, creates some of the sharpest and most long lasting edges found anywhere. A rounded, polished spine and choil ensure the knife will be comfortable even after hours of use. Bill's touchmark is engraved on the left side and his M.S. mark is on the right side.
Stabilized spalted silky oak handle scales are hand contoured for a comfortable grip. Silky Oak (Grevillea robusta) is a striking Australian hardwood prized for its shimmering, lace-like grain and warm tones. Despite its common name, it is unrelated to true oaks, which belong to the family Fagaceae. The scales are set on the full tang using three hidden bolt rivets. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak. The front of the handle is sealed with a 416 stainless steel bolster. The knife has perfect balance and feels exceptional in hand.
