Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing, chopping, and mincing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 9-1/2 inches, this knife is perfect for those that prefer a slightly longer knife for preparing larger meals.
The 9-1/2 inch blade is forged from Bill's own twist pattern damascus, combining 1080 and 15N20 carbon steel to ensure excellent edge holding and chip resistance. A differential heat treatment separates the ultra-hard cutting edge from a softer, more supportive spine. This blade is laser thin geometry and will chop through even denser foods effortlessly. Despite the longer blade, this knife is extremely lightweight and perfectly balanced. The spine and choil are rounded for comfort. Bill's touchmark is engraved into the left side of the blade. His M.S. mark is engraved into the right side. We recommend using camellia oil to protect the blade from rust and oxidation.
The full tang handle has cocobolo scales, hand contoured to provide a comfortable grip. It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. The bolster is 416 stainless steel, pinned and soldered to the blade. It is shaped to comfortably accommodate a pinch grip. Like other knives, this knife should not be put in the dishwasher.
