Description: Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
The hand forged san mai blade combines high performing W2 carbon steel with wrought iron sides. A thin nickel layer set between the W2 and wrought iron limits carbon migration and creates a particularly dramatic transition between the layers. The antiqued wrought iron provides a dimpled surface to help with food release. Like his hunting knives, this chef knife was tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steel, ensures some of the sharpest and most long lasting edges found anywhere.
The handle is Arizona desert ironwood. The warm toned wood has a swirling figure. The distal tapered full tang ensures perfect balance. The handle is fit to stainless steel bolsters. The knife has perfect balance and feels exceptional in your hand. It is sure to become a kitchen favorite.
