Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing, chopping, and mincing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 7-3/4 inches, this knife is perfect for those that prefer a slightly shorter knife that is easier to control – yet has enough reach to get most any task done.
The blade is hand forged River of Fire damascus, combining 1084 and 15n20 carbon steels. This is a pattern that Bill invented and has become a hallmark of his work. The blade and tang are distal tapered providing a perfect balance. Both the spine and choil are nicely rounded for comfort. The blade is ground beautifully thin and will slice through foods with nearly zero resistance.
The handle is presentation grade curly koa (acacia koa), secured to a full tang for strength and durability. This durable stabilized wood is only found on the Hawaiian Islands and is one of the most desired woods used in knifemaking. The scales are perfectly fit to polished 416 stainless steel bolsters. Like other knives, this knife should not be put in the dishwasher.
