Description: This exceptional paring knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives. This paring knife is an exceptional example of his work.
The paring knife is the second of the most essential kitchen knives every cook should have on hand. After a chef's knife, you need a paring knife. It's perfect for any paring task, from hulling strawberries to peeling an apple. It also handles jobs such as chopping small foods, like garlic cloves or ginger, against a cutting board. The 3-3/4 inch blade is the perfect length for most jobs.
The hand ground blade features a premium VG-10 stainless steel core (hagane). This is surrounded by many linear layers of high contrast damascus. This time consuming process creates a knife with outstanding edge holding and beauty, without the brittleness of many other high performing steels. VG-10 is a tried and true quality culinary steel that provides excellent edge holding and great stain resistance.
The Japanese-inspired octagonal handle is stabilized cottonwood. It is hand fit to a blue dyed and stabilized curly maple ferrule. A nickel silver spacer will help the woods adjust to humidity and temperature changes. A matching cottonwood section is inlaid into the end of the handle. Like other knives, this knife should not be put in the dishwasher.
A tooled leather sheath is included to protect the knife during transportation.
