Description: Journeyman Smith Jim Arbuckle resides in Yorktown, VA. He started making knives in 1979 and has been forging knives since 1996. Growing up in Washington State, he spent most weekends hunting and fishing and has a great understanding of what features make a knife perform well. For many years he has made high performance kitchen knives that are the favorite of home cooks and chefs around the world.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The 3-2/3 inch blade is hand ground 440C stainless steel with a hand rubbed satin finish. 440C is tough, chip resistant, and maintains a decent cutting edge. Jim triple tempered the blade to 59-60 HRC for optimal performance. It is a tried-and-true steel. The blade is convex ground for good release. Jim's touchmark is on the left side of the blade.
Rosewood Dymalux handle scales are set on a full tang for strength and durability. Dymalux will hold up exceptionally well to the high demands of either a commercial or home kitchen. Modified bamboo filework between the scales has been filled with black epoxy and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. The handle is contoured with a deep choil - this semi-circular cut-out allows the forefinger to rest comfortably and makes the knife easy to hold in several different grip options.
