Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
You can think of a paring knife as a smaller version of a chef's knife because a paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is hand forged Yu-Shoku. Alternating layers of brass, copper, and stainless steel surround a V-Toku2 carbon steel core. The dramatic blade combines the exceptional edge holding of carbon steel with significantly easier care. V-Toku2, the steel which forms the cutting edge, is a 'super-steel' created by Takefu, in Japan. Very high in carbon content (approx. 1-1.1%), this steel holds and takes an amazing edge. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust. The blade has tremendous, thin geometry and will effortlessly slice and chop. The spine and choil are nicely rounded for comfort. Bill's mark is on the left side of the blade.
The handle is extremely rare high Arctic muskox horn. Muskox (Ovibos moschatus) is an Arctic mammal of the family Bovidae. Muskoxen primarily live in Arctic North America and Greenland, with small populations in Sweden, Siberia and Norway. The world population is estimated at between 80,000 and 125,000. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished horn has a unique grain structure that immediately grabs the eye. It is nicely contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The handle combines a polished surface with hints at the natural texturing of the horn. Muskox horn, which is quite resilient, is a perfect choice for use in either a home or commercial kitchen. The handle is finished with a forged mokume gane bolster incorporating brass, copper, and nickel silver.
