The Wusthof Classic 6 inch flexible boning knife is the perfect butchery tool for red meats like beef and pork as well as poultry such as chicken and duck, and has just enough flex to easily prepare smaller fish as well. The thin and easily controlled blade slices cuts of beef into steaks, removes silver-skin and fat, or can break down a whole chicken or trout. The handle is Polyoxymetholene (POM) set on a full tang with three rivets. POM is a synthetic thermoplastic that holds up very well to the stresses of heat, moisture, impact, and acids. The integral bolster keeps your hand from sliding forward onto the blade even with wet or slippery hands.
The 6 inch blade is crafted from X50CrMoV15 stainless steel (58 Hrc) and features a satin finish. An exacting chemical makeup of carbon, chromium, molybdenum and vanadium provide excellent corrosion resistance and a long-lasting edge that is easy to resharpen. The straight spine makes it easy to utilize the tip of the blade for extra control when cutting near bones and joints.
