This custom chef's knife was made by Adam Andrews of Acre Forge. Adam has over 12 years experience as a knifemaker and prefers to make Japanese-inspired knives.
The santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The blade was hand forged from Andrew's own san mai, combining a 52100 carbon steel core with mild steel clading. A large nickel layer set between creates an engaging transition point and helps prevent carbon migration. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. The spine and choil are nicely rounded for comfort. Adam's touchmark is on the left side of the blade. The Acre Forge mark is on the right side. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade and natural wood handle.
The handle is ancient bog oak which will hold up well to the demands of a professional kitchen. This wood has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. Stacked white, yellow, red, and Tiffany blue G-10 spacers separate the handle from the matching bog oak ferrule. The front of the handle is sealed with black G-10 to prevent water from getting in. Like other knives, this knife should not be put in the dishwasher.
