This custom nakiri was made by Chloe Kim of Acre Forge.
The nakiri is a traditional Japanese chef's knife shape ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
The 6-3/4 inch blade is AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The spine and choil are nicely rounded for comfort. Chloe's touchmark is on the left side of the blade and the Acre Forge mark is on the right side.
The handle is frame construction. Stabilized spalted maple and bog oak handle scales are set on a frame combining black and neon green G-10. The ancient bog oak has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. Blue G-10 spacers will help the materials adjust to humidity and temperature changes of a professional kitchen. Like other knives, this knife should not be put in the dishwasher.
