Description: This vegetable cleaver was made by Canadian bladesmith Casey Vilensky. Casey creates exquisitely forged mosaic damascus and integral chef’s knives. He favors Japanese-inspired knives for the ultra-fine cutting edge he’s able to achieve.
Vegetable cleavers are ideal for vegetables and noodles. The thin edge geometry makes it a precision tool, rather than a replacement for a Western meat cleaver. The tall height is great for moving food from the cutting board to the pot.
The blade is meticulously forged Turkish Twist pattern damascus, combining 1084 and 15N20 carbon steels. Eight bars of twisted damascus were set in opposing directions, creating this complex and captivating pattern. The bolster is integral to the blade, with the pattern moving seamlessly from blade into the bolster.
The ambidextrous Japanese-inspired octagonal handle is stabilized curly koa. This koa is a nice mix of heartwood and sapwood, combining darker and lighter tones. The octagonal handle is precision fit to the integral bolster in a keyhole technique. The integral bolster and keyhole technique show Casey’s exquisite skills at their best.
Though large, this knife has exceptional balance and you'll find yourself using it for all sorts of tasks around the kitchen. This is a knife you won't want to put down! Like other knives, this knife should not be put in the dishwasher. Excellent work throughout!
