Description: This chef’s knife was hand forged by Rhode Island bladesmith Josh Prince. Josh’s work combines high functionality with artistry to create knives that are sure to become a family heirloom.
This knife will be a perfect 'go-to' knife in the kitchen. The 8-3/4 inch blade provides plenty of reach, while still being easy to control. A gentle arc to the blade's edge makes this a perfect knife for both a rocking chop and a forward slice. Whether chopping onions, slicing tomatoes, mincing parsley, or portioning and slicing meats, this elegant chef's knife is sure to become a favorite in your kitchen.
The knife was forged to shape from a single piece of CPM-3V tool steel. At 7.5% chromium, CPM-3V is considered a carbon steel (since it must have >11% chromium to be considered stainless), yet it does have limited rust resistance and is easier to care for than many carbon steels. We recommend using camellia oil to avoid oxidation. Additionally, it combines outstanding toughness and superior edge retention. The resulting blade will have an extremely keen, long-lasting edge. A shinogi grind ensures effortless food release from the sides of the knife. The spine and choil are well-rounded to reduce hotspots when used in a pinch grip.
The handle and bolster are integral to the blade. Creating an integral knife results in superior strength and durability, but takes a particularly talented bladesmith. Prince was clearly up to the task. Essentially, the entire knife was forged fully to shape from blade to handle. This shows tremendous skill at the forge that few knifemakers can pull off. It both creates a more optimal grain structure in the steel and limits break points within the knife, ensuring it will last generations. While a few other makers have attempted this style of knife, this is among the most comfortable handle of this style I have ever felt!
Like other knives, this knife should not be put in the dishwasher.
