This 5-3/4 inch chef's knife is perfect for those who prefer a smaller, more nimble knife. It still has plenty of height over a cutting board for a rocking chop. From mincing garlic to chopping carrots, this knife has you covered. Despite its compact size, it still offers generous knuckle clearance and enough height for a comfortable rocking chop. It’s a versatile little workhorse that handles everyday prep with ease.
The blade is forged from Andrew's own explosion damascus, combining 1084 and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The complex, high-contrast pattern is extremely engaging. The spine and choil are nicely rounded for comfort. Andrew's touchmark in Japanese kanji is on the left side of the ricasso. His M.S. mark is on the right side. Because the blade is forged from carbon steel, we recommend using camellia oil to protect the blade from rust.
The ambidextrous oval handle is thuya burl. It is hand contoured to provide a comfortable grip. Thuya burl offers a tight, swirling burl pattern with countless eyes, giving the handle a refined, almost hypnotic visual depth. Its density and natural oils allow it to finish to a silky, high-polish sheen, making it both durable in use and unmistakably elegant. The front of the handle is sealed with an heirloom fit mammoth ivory spacer. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
