Utah bladesmith Mike Hathenbruck (b.1974) creates knives that capture the balance between art and utility. Working from his forge, Hathenbruck Steelworks in Logan, Utah, he shapes steel into blades that are as honest as they are refined — marked by clean geometry and excellent fit and finish. This chef’s knife is an exceptional general-purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The blade is forged from Hathenbruck's own damascus san mai. The damascus cladding was forged from 1084, 15N20, and many guitar strings. This damascus surrounds a central core of shirogami carbon steel. Hitachi Shirogami 2 (white steel) steel is tremendously high performing, with an extremely keen edge. The core is dark etched to provide some limited rust resistance. Because the blade is forged from carbon steel, we recommend using camellia oil to protect from rust.
The Japanese-inspired ambidextrous octagonal handle combines sections of spalted maple with stainless steel spacers. This is designed to represent a guitar fretboard, continuing the story told through the guitar string damascus. This knife is comfortable and will be a joy to use as the primary chef’s knife in your kitchen. Like other knives, this knife should not be put in the dishwasher.
