Description: Utah bladesmith Mike Hathenbruck (b.1974) creates knives that capture the balance between art and utility. Working from his forge, Hathenbruck Steelworks in Logan, Utah, he shapes steel into blades that are as honest as they are refined — marked by clean geometry and excellent fit and finish. Each piece carries a sense of the maker’s hand and the rugged beauty of the mountains that inspire him. Mike builds knives meant to be used, admired, and passed down — tools that tell the quiet story of craft, patience, and fire.
The nakiri is a multipurpose chef's knife ideal for chopping fruits, vegetables, and boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping. The tall profile is great for moving foods from cutting board to skillet.
The 7-1/4 inch blade was hand forged from Hathenbruck's own damascus, combining 125Cr1 with 15N20 carbon steel. This combination is exceptionally dramatic and ultra-high performance. The blade is thin geometry for efficient slices with an S-grind for effortless food release. Hathenbruck's touchmark is on the right side of the blade.
The ambidextrous Japanese-inspired octagonal handle combines presentation grade amboyna burl with a black Micarta bolster. The combination of materials creates a durable, yet beautiful handle. This nimble knife is perfectly balanced: once you use it, you won't want to put it down.
