Description: Utah bladesmith Mike Hathenbruck (b.1974) creates knives that capture the balance between art and utility. A bunka is a Japanese general-purpose chef's knife. Like the santoku, the bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty belly curve to enable rocking cuts, which adds to the bunka's versatility. Once you use it, you'll find yourself reaching for this precision knife more and more often.
The 8 inch blade was hand forged from Hathenbruck's own damascus, combining 1084 with 15N20 carbon steel. This combination is exceptionally dramatic and ultra-high performance. The blade is thin geometry with a convex grind for efficient slicing and effortless food release. Hathenbruck's touchmark is on the right side of the blade.
The ambidextrous Japanese-inspired octagonal handle combines presentation grade amboyna burl with an integral bolster, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith. The amboyna burl combines heartwood and sapwood for a particularly dramatic appearance. This bunka is perfectly balanced: once you use it, you won't want to put it down.
