Description: This chef’s knife is made by Evan Davis (Enceladus Cutlery). Evan handcrafts his knives at his childhood home in the Santa Cruz Mountains. Davis’ knifemaking developed out of a drive to make things with his hands. The love of food and the pursuit of a better knife drove him to custom chef’s knives. Enceladus Cutlery is his passion project. He loves that a good knife makes you want to get into the kitchen and cut more veggies!

At 8.2 inches, it has a long enough reach for virtually any task, yet it is still easy to control. The blade was ground by hand from AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is nicely thin with a convex grind for effortless food release. A distal taper ensures perfect balance. The spine and choil are rounded for comfort.
The Japanese-inspired handle offers a comfortable, ambidextrous grip. The handle is Gaboon ebony with a light-toned paper Micarta bolster. Like other knives, this knife should not be put in the dishwasher. This knife is sure to become a favorite in your kitchen!
