Description: Will Hutchinson (b. 1983), known simply as Hutch, creates knives that perform flawlessly in demanding kitchens. He forges and shapes every blade with attention to detail, refining lines, curves, and geometry through years of experience. He designs handles to fit comfortably and intuitively, blending ergonomics and form.
This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty finger clearance over a cutting board.
The 7-3/4 inch blade is hand forged 26C3 carbon steel. This Uddeholm carbon steel is a high-carbon, low-alloy steel well-suited for fine cutting knives. Sometimes called 'Spicy White', this very clean steel is relatively similar to Hitachi White. The resulting blade has an extremely keen, long-lasting edge, yet it is also relatively easy to sharpen on stones and is very responsive to a ceramic honing rod. This steel was forged closely to shape. A forge-finish near the spine assists with food release. The flat ground blade has thin geometry for efficient slicing and chopping. Hutch's touchmark is on the left side of the blade.
The ambidextrous Japanese-inspired octagonal handle is Arizona desert ironwood. Ironwood (Olneya tesota) is a warm, dark-toned wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is extremely dense and durable. In fact, it is so dense, that if a piece is dropped in water it will sink! The front of the handle is sealed with a brass bolster. A Sunset G10 spacer assists the handle to adjust to temperature and humidity changes. The combination of materials creates a durable, yet beautiful handle. This elegant knife is nicely balanced: once you use it, you won't want to put it down.
