Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles), and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
This is a double-bevel kiritsuke chef’s knife. Its fairly straight cutting edge is ideal for push chopping, tap chopping, and slicing, allowing the entire length of the blade to be used. The straight spine can be used to move food on the cutting board or to a pan. Whether chopping, dicing, mincing, or slicing, this chef’s knife will become a kitchen favorite.
This kiritsuke was hand forged thin and close to final size from 50100, and the hand forging texture is apparent along the spine of the blade. It features a flared choil, for an extremely comfortable pinch grip. The 50100 steel is old-stock ball bearing steel with a composition between 1095 and 52100, hardened to 62 Rockwell.
The wa handle is inspired from a handle Dale made for his niece and her husband, a pianist and choral conductor. The alternating pieces of African blackwood (Dalbergia melanoxylon) and stabilized Holly (Ilex opaca) are intended to be reminiscent of the ebony and ivory of a piano keyboard. The handle ferrule is water buffalo horn. The handle is finished with multiple coats of Tru-Oil for a long-lasting finish.
