Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles), and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
The blade is hand forged from 1-1/4 inch 52100 carbon steel round bar. Although originally designed as a ball bearing steel in the early 1900’s, today it is arguably considered the best performing steel in the kitchen – it can be heat treated to high hardness (preventing rolling of the edge from use) while remaining very tough (preventing microchips forming along the cutting edge during use). It provides an exceptionally keen, long lasting edge matched with excellent durability. The spine and choil are nicely rounded for comfort. The distal tapered blade has beautifully thin geometry for high performance cuts. Dale's touchmark is on the left side of the blade. We recommend using camellia oil to protect the blade and natural wood handle. This knife is heat treated to a Rockwell 61.5.
The bolster is integral to the blade and will accommodate a comfortable pinch grip. This technique has superior structural integrity and requires a particularly talented smith.
The handle is made from Indonesian teak (Tectona grandis) burl, which is stabilized and finished with multiple coats of Tru-Oil, for a long-lasting finish. Teak burl is quite rare on the world market, and this was acquired directly from a small supplier in Indonesia. Indonesian teak is a renewable resource because it is grown on plantations, unlike Burmese teak, which has been depleted by overharvesting in its native old-growth forests. The spacer is made from stabilized holly, and the handle pin is bronze.
The knife is accompanied by a custom built yellow poplar saya for easy storage and transport.
