Description: What began at age 13 as a young pursuit of craftsmanship and self-reliance — using a campfire and a hair dryer to forge steel in the Georgia heat — has evolved into a passion-driven business for knifemaker Zach Rhymer. Longer than the santoku, the gyuto is the essential kitchen knife and is used for all-around food preparation. The kiritsuke gyuto has less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice, and it needs to be lifted less, making cutting more efficient. The arc of the blade edge is perfect for a rocking chop. The slim profile keeps the weight low and the balance just right. The blade is hand ground Nitro-V stainless steel. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless.
The handle is sculpted from stabilized curly maple. It is hand chamfered to provide a comfortable grip with no hot spots. An African blackwood bolster adds excellent contrast to the light-toned curly maple. A polished stainless spacer finishes the handle. Like other knives, this knife should not be put in the dishwasher.
A branded zipper case is included to protect the knife.
