Description: The nakiri is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision chef's knife rather than the Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing, chopping, and dicing.
The blade is hand forged Shirogami #1 carbon steel, hardened to 61-62 Hrc. Shirogami (white steel) is a high quality steel with a high carbon content and almost no impurities. It can be made very hard and thin, producing an exceptionally sharp blade. It is also very responsive to ceramic honing rods and is easy to sharpen on stones. It is a preferred steel among many sushi chefs. By surrounding the Shirogami 1 with stainless steel, Abe ensures that this carbon steel knife is easier to maintain. The blade features a thin, high performance grind.
The unique handle was developed by Abe. The twisted pentagonal shape is very comfortable in hand. Zelkova wood (Zelkova serrata), is a strong, durable hardwood prized for its beautiful figure and light golden-brown color.
We recommend using washing and drying the knife after use. Camellia oil helps protect the carbon steel core from rust and encourages protective blue/grey oxidation. Like other knives, this knife should not go through the dishwasher.
About the maker: Isamitsu Abe was founded by Yuki Abe, a Paris-born blacksmith who established his workshop in Sakuragawa, Ibaraki Prefecture, in 2022 after 15 years of training. During his training, Abe worked under legendary knifemaker Teruyasu Fujiawara. Though Fujiwara’s influence is clearly evident in Isamitsu’s knives, Isamitsu created their own new style. Abe’s knives feature high carbon steel cores (primarily Shirogami 1 and Aogami Super) set between layers of stainless steel, creating durable, exceptionally sharp blades crafted with meticulous attention to detail.
