Description: The chef’s knife is the essential kitchen knife. It's used for all-around food preparation. The traditional Japanese blade shape (called a gyuto) has slightly less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, allowing more food to be cut per slice. The Sukenari chef's knife has a gentle roll off the tip compared to the large belly on a Western style knife, so it has to be lifted less, making cutting more efficient.
Sukenari is a small bladesmith shop in Toyama Prefecture, located approximately in the center of Honshu. The company has been in business for two generations and is widely known for its excellent work using quality steels with impeccable grinds.
The Sukenari HAP40 series features hand ground blades clad with elegant damascus (suminagashi). The face of the blade is convex ground to reduce sticking and friction during cutting. The edge is an ambidextrous 50/50 grind. This light weight, perfectly balanced knife is sure to be a favorite in your kitchen.
The core of the blade is formed from HAP40. Hitachi HAP40 offers a keen, exceptionally long lasting edge without the care of carbon steel. Though the cutting edge is very hard, the small grain structure of HAP40 makes sharpening and honing effortless. The core steel will form a patina slowly over time. This blade will have a superior, long lasting keen edge.
The octagonal "Wa" style handle is sculpted from bocote with a blond buffalo horn ferrule. This natural, ambidextrous handle is easy to grip and lasts a lifetime. Octagonal handles are very popular among professional chefs because they are comfortable even when used for hours at a time. Like other kitchen knives, this knife should not be put in a dishwasher.
